Maison Souply – four generations since 1930. A simple restaurant featuring old bistro chairs and dishes prepared with fresh produce exclusively in the centre of Châlons. Offal gets a makeover thanks to the harnessed passion of the chef.
A must-try, and it's also the House speciality: the crispy pig's trotters or the tête de veau (calf's head) with ravigote sauce.
Then if and only if your stomach can afford to stretch a little further, go for the chocolate soufflé: a highlight!
